Our family has been associated with farming and animal husbandry since 1937. Roland and his son, Robert, spent decades growing and managing a successful dairy farm. During this time, Robert grew his expertise in breeding and raising Holsteins; having several cows placed in the top ten at the World Dairy Expo. In 1996, the farm transitioned out of the dairy milking business to focus on raising Holstein steers for meat while continuing to grow crops to feed our livestock. In 2006, Robert and his wife, Darlene, established Engleking's Country Beef Shop. The farm is now entering its third generation as Robert's daughter, Andrea continues to provide our community with the same high quality meats they have enjoyed for years.
We know that food grown on healthy land with healthy farming equals healthy food. Our cattle are raised on grass pastures with full access to as much homegrown grain as they want. The pastures allow the cattle comfort and natural grazing while the grain enhances marbling for flavor and tenderness. We raise our animals without the use of steroids, hormones, antibiotics, or bi-products from other industries. We grow and mix our own grain so that we know exactly what our cattle are consuming. We even grow our own Non-GMO corn that we use in our grain mix.
Traditional beef breeds gain trimmable fat quicker and easier than Holsteins, therefore are easier and more economical to raise. Because we are concerned about producing the highest quality beef, we raise Holstein cattle for their tremendous amount of marbling which enhances the flavor and tenderness. Another advantage of the Holstein breed is uniformity of genetics. The breed is incredibly consistent in growth and has very predictable carcass characteristics.
